Blue Diamond Blanched Almond Meal

Earl grey tea leaf (Fine grinded)

  • Method

1. Sift together the cake flour, almond meal, baking powder. Add in Earl Grey tea leaf, set aside

2. Melt the butter till it turns in caramel color

3. Incorporate egg white and sugar, let it rest for 1-2 hours or refrigerate it overnight

4. Add sifted flour into egg white mixture, well mix

5. Place the batter into a baking molds and sprinkle some hazelnut crumbs on top

6. Preheat oven to 190℃, bake for 15 minutes till financiers until golden brown

7. Allow to cool sligthly, remove the finanaciers from molds & serve
