Yoghurt-wholewheat Hotcake with Strawberry & Apple Cheddar Chocolate


Yoghurt Wholewheat Hotcake (36pcs ) 

200g    Cake flour 
300g    Wholewheat flour 
2g        Salt 
4g        Baking Powder 
2g        Baking Soda 
100g    Sugar 
250g    Natural Yoghurt 
360g    Devondale UHT Full Cream Milk  
1 ea     Lemon Zest 
40g      Egg Yolk 
60g      Egg White 


  1. Combine dry ingredients in mixing bowl, set aside. 
  2. Whisk plain yoghurt, milk, lemon zest & egg yolk well, stir in dry ingredients. 
  3. Whisk egg white to peak stiff, fold in hot cake batter. 
  4. Panfry hotcake into Ø4cm approximately. Allow to cool. 

Apple-Cheddar chocolate 


30g        MG Unsalted butter 
200g     62% Dark chocolate, melted 
100g     Whipping cream 
50g       MG Cheddar (grated)
3 ea       Fuji Apple, brunoise 
36 pc     Fresh strawberries  


  1. Sauté diced apple with butter until golden brown color, drain out the jus, set aside. 
  2. Make ganache with dark chocolate and whipping cream. 
  3. Stir sautéed apple in ganache, mix in grated cheddar cheese. 


  1. Arrange hotcake on the plate, put apple-cheddar chocolate on hotcake 
  2. Top with strawberry & grated cheddar.
